Engine bay - Matte or High gloss ?
No its just gloss grey and from what I understand its an older race car thing, they'd paint their bays grey since it was a nuetral color, that way they could change the exterior color as often as they wanted. Especially since cars were often sold and run by different teams/sponsers every year.
The Enjuku race cars followed this same idea.

I think you should just go with gloss and keep it simple, its too much of a pain in the ass to try and not get the bay to gloss over. Cleaning up oil and dirt over time will rub away the matte effect and eventually a sheen will start to pop up in well used places.
Factory engine bays are cleared, its just not buffed or cleaned up from factory and after all the dirt and grease it gains over the years it looks flat but if you degrease a bay it will turn shiney, its dull but its still gloss not matte.

I still cant believe a single stage with matte additive would turn shiny, i'd think all of it would have to be solid sheen all the way thru.

It dosnt matter, the paint itself is hard. You can shine anything even plastic (which is what paint is.)
Single stage is mixing the clear in the base together so to speak. Its still a Urethane coating.
My bay was done in single stage then cleared, while my core support is only single. My core support is way higer gloss than the twin stage bay.

Maybe i'll just do 4 or 5 coats of basecoat and then leave that, haha now that wont likely shine up on me, bet it'd get trashed awful quick 
I think i'll just use the matte clear I already have, just need to find someone to sell me a little PPG hardener.

It dosnt matter how much matte clear you use, once the surface is buffed or rubbed enough it will turn shinny and thats the end of it. Its just not going to be a deep shine so it will look like a gloss coating over dull paint.
