Being that you are a paint guy, i've got a Q for you, what do you think on which to use, i've already got some ppg matte clear, which I was considering using, but im pretty sure the one time i've used it, when i bumped it with a buffer, next thing I know its kinda shiny, think i'd be better off using single stage for the bay with flattening additive ?

Nope it will do the same thing. It dosnt matter any type of "matte" or "flat" paint will become shiny when buffed single or twin stage. I've talked to the guys at the paint supply store quite a few times on the subject. Its kinda similar to when you wetsand a car and it becomes hazy then you hit it with a buffer and it turns into gloss again.
