Alternator maybe not putting full power to the ecu causing the gauges to bounce around. Try this, put a battery charger on it and let it idle and heat up see what happens. Or check the voltage could be a bad regulator in the alternator too

Fixed it, not sure what it was but i found a flaw from in the body harness fixed that, & got new coolant temp,knock sensor , & o2 sensor. & its fine now.
