Difference in the accuracy between electrical and mechanical?
Because there sure is a difference in the price! Looking at AutoMeter gauges (phantom series) (EGT Boost A/F Fuel pres.)
Would I be alright going with mechanical gauges?

i would not waste my time with the air/fuel ratio gauges. honestly they dont do anything jack shit. and if you are staying with stock ecu you know your limits already.
however
EGT / Boost / Oil Pressure isnt a bad combo for your pillar gauges.

what matt said.
i have seen guys get by with just boost and most people get by with just boost and oil pressure as the egt will be needed for future modification obviously but isnt necessity unless you feel like u need it for monitoring. a/fs dont do shit unless you have a motec or a greddy which are like 1000$+
electrical and mechanical are the same accuracy just electrical have the senders because mechanical use nylon line to bring the air water fuel or oil into your cockpit to reach the gauge.
for boost and oil pressure id say its ok to use mechanical.
for fuel pressure you definately would want an electrical gauge you dont want fuel in your cockpit if there happens to be a leak in the line.
just as long as u install correctly you should be fine.
i have boost and oil pressure mechanical and they run about $50-$60 each. im still debating on using a pillar though. i want sleeper/stock look and blitz discontinued its DIN panel pods so i will either have to find a 3 gauge saab panel or buy some carbon fibre or lexan (black) and cut holes. i want them above the radio in DIN slot.
HTH
optauto and nopi have alot of gauge selection but i havnt found anywhere that has the pods in stock.

For gauge pillars try: www.gaugepods.com
For A/F gauges: www.gadgetseller.com They sell modified Autometer and Nordskog that reads ONLY at WOT. Much more faster and accurate than a stock unmodified gauges. It gives you the accuracy of a digital voltmeter w/o the hassle. Please remember that the gauges only read WOT they will not read idle or cruising measurements.
