I got a leak?
Sounds like you may not have gotten the head seated properly. I once had a friend who had a leak at the firewall after he redid his heads. Turned out that when he pulled the heads, one of the alignment dowels stuck in the head and one stuck in the block. When he put it back together, he put another dowel in the empty hole in the block. Put the head back on and torqued it down not realizing he had 2 dowels in one corner of the head. That leaves a bit of a crack at the corner.
True story. Check and see if the head is on straight.

really? how do you not know theres one dowel pin in each head?
op: check this and check heater core.

I was hoping somebody would ask that question. There's a hole in the head and a hole in the block. It goes in roughly 1/2 way in each when you put it together. When you take it apart to do a head gasket, usually it sticks in one side or the other. Very rarely does it fall out on the floor. Tip of the day to not do what that guy did...look in the head and the corresponding hole in the block. You should only find one. If you find 2 or none, pull th heads off and find it.
Remember, on the 302, maybe some others, I don't know, the heads are reversible from one side to the other so it is actually very easy to end up with 2 dowels in the same hole. Hopefully you would figure it out before reaching full torque.
For now, a quick check is to stick your most sensitive finger on the seam between head and block and feel it all the way around. If it's up, you'll know it. The guy I'm talking about torqued all the way and the 2 dowls sort of mushed into each other The gap at the passenger side rear corner was about 3/16 of an inch. I know what you're gonna ask...I don't know how...Popeye arms maybe.

I thought it was while it was running that you saw these mysterious puddles underneath the car.
Whenever I get a free minute and im up in that area. Been running back and forth to Daytona. The gf's brother just passed away so it's gonna be a rough Christmas, til she see's the ring I got her
$10 says the OP's car issue, the rear of the intake isn't seated properly or the gasket is mis-aligned. Very easy mistake to look over.

No, he said it was leaking in the back while he was filling it with water. As far as I can tell, it either has to be a heater hose split or not hooked up, The head wopperjawed on the block, or the intake crooked or busted the gasket. (but I don't see how it would run out on the ground if the intake gasket was busted. The throttle cable likes to get stuck under the intake and holds it up sometimes. Last option is a freeze plug leaking.

The first engine I carburated, I mis-aligned the passenger side gasket, when it was running it would run down the back of the engine and leave a puddle under the header.
