Q.1)What do you look for in the cometic gaskets that would tell you that its not usable anymore. I have not had a blown head gasket yet and they have only been removed because the heads were being changed. this will be the third time re-using the heads.
Q.2) Do you think i would be better off putting my head gaskets on dry again, or using the spray seeing that it is the third time re-using them.

are you rotating the sides? was told to do that so they dont develop a "memory" was also told not to put anything on them and to spray the surfaces down with brake cleaner and wipe them down so no foreign substances contaminated the surface.

Well I just built a 347 for a customer and never used anything. No spray of sealent. no problems with anything Now at over 1000 miles

I ended up not spraying anything on mine and did clean the surfaces of the block and head prior. We will see how it turns out.
