I wanna maintain somewhat good mileage but still have decent performance. Plans for the car are just bolt-ons and maybe cams in the future.

I had 4.10s with my auto, and gas mileage was total crap. I got about 12-14mpg. With only a 12.5 or so gallon tank, it goes fast.

the MPG difference between 3.73s and 3.55s is negligable...my GT has 3.73s and i get 19MPG in the city, and my cobra has 4.10s and i get around the same. and i dont drive like a grandma either.

3.73 are good for basic bolt-ons.If you get into cnc'ed heads and cams, then 4.10 may be the ticket to keep the right rpm range.
