I did the same thing as you when I went from my 2003 M3 to my Mcoupe. The Mcoupe was only $10k and would be much more fun to tinker with than my (at the time) 4 year old pristine M3. I had/have no aspirations of racing it, and never plan to make it non-street legal. I just wanted something that was cheaper, easy to work on, fun to drive, and needed many things replaced.
I'd say you need to draw a big line between tracking a car (even a race car) and racing a race car. The expenses have no limit, and if you don't fix your car, you don't drive. Entry fees per seat time are usually less, but there's a trophy.
You say you don't want to be competitive NOW, but when you get to MAT (Monday after the track), you'll be researching and dreaming of more speed or more coaching = $$$.
If you want a little more power, and BMW 325 E30 might be the ticket. Hell, my plan at this point is to eventually get a 92-94 BMW 325i/is and build towards Spec3 (NASA E36 racing). There's currently only one car in FL so I'm in no hurry. The car has 170hp, and once you strip it down, it'll put laps down near what my mcoupe will...and teach more momentum driving. They're very popular in the north east.
