i'm not aware of any adjustment for the IAC. I think you are referring to the throttlebody stop screw perhaps? when you change that the TPS should be checked.

If all you did was take off the IAC and the TPS and NOTHING else was touched i would suspect the TPS for your stuttering/hesitation problems now.

You said the idle is fine now correct?
