I agree with what you are saying. I try and stick to the rule of thirds. Otherwise, if I do center up my subject I try to leave some background/foreground surrounding it.
For instance:
if that picture was cropped to where the top and bottom is right on the roof/bumper line it would look very boring. Mind you, the background sucks for shooting cars anyway, but when you are at a car show, you have no choice on moving backgrounds. Just able to dodge around people.
