How about something like this. I was thinking about covering the doors and bare interior (sides next to the rear seat where the plastic panels used to be). Jimmy Shine did it on his truck although I cant find any pictures of it. He had buttons and snaps that held the canvass on like the floor mats and rear section behind the seats on this car:
