I've got a 70 Fastback (or SportsRoof if you want to be correct ) that i'm slowly resto-modding. I am taking a similar approach to you, stripping it down, getting it media blasted, etched and primed. From what I've seen a decent media stripping job can run on an average of about 1k-1.5k give or take (however i"m in TN so it might be a little different from a price standpoint).
Personally, I'm not much of a body man, so I plan on farming out the repair from that standpoint and a few other items that are high impact when it comes to a vehicle's presentation, however I plan on doing as much as possible from a mechanical standpoint.
