This is true.
But stroking does more that add volume.It changes the dynamics of the whole motor.
Nissan designed that motor with boost in mind.
Swap pistons and some other small details, and that short block is ready for 700hp. While still at 3.0.
That 3000 could be better spent elsewhere.
