One thing you guys aren't mentioning in the comparison is that just as in EFI, the faster you go, the more expensive the parts are. Sure you can go 10's on a Holley 750, just as you can go 10's with stock EFI. But when you go 8's, you're going to have a custom carb that's been gone through, and its going to be expensive. The same with an EFI setup. Its cheap to go fast with both systems and its expensive to go even faster with both systems.
