And the reason its done for tuning is because most shops charge by the hour for dyno time and it would take a lot longer to keep pulling the valve cover off to make the adjustments. I think this could be avoided by just getting a beat up valve cover done for tuning and a nice one to keep on like InTeGrA RaCeR said keep your shit a mystery meaning as stock as possible so no one knows what you have.
