oil pan gasket removal
You can't just slide the old one out and the new one in. That is not te correct way to replace gaskets. You should drain the oil, remove the pan, clean the mating surfaces and then apply the new gasket and reinstall the pan and fill with new oil and a new filter.

if you can just "slide" the old gasket out, then yeah sure, just slide the new one in.
the surfaces would have to be clean for the old one to just slide out.
I personally have never even heard of an oil pan gasket that just slid right off. They usually took a little scraping and picking and all of that to get them off.
So, to pull the oil pan off/out, you have to at the very least, raise the engine.

I'm guessing you've never worked on a car with a 1 piece moulded rubber oil pan gasket then

But yeah, uhh no, s-chassis generally use either a cork type gasket, or just rtv, you're gonna need to remove the pan, clean everything, apply new rtv, then reinstall.
Yes it is possible to take care of this without completely removing the engine though.

step 1 - jack up car
step 2 - loosen subframe bolts to lower it some
step 3 - remove pan
the rest should be self explanitory...
Or PM z28 ricer and ask him how much to replace it

5. Take off oil pan bolts, before you can take out the oil pan, you will need to take off the oil pickup thing
6. Clean off the surfaces where the oil pan and the motor meet.
7. Apply rtv liquid gasket to oil pan surface
8. Install oil pan and pickup and lightly tighten the oil pan bolts, do not tighten them all the way down yet
