Fabrication wise ?

Possible crossmember modification.
Custom engine mounts and crossmember.
Custom Y pipe, or headers. Depending on what fits.
Custom Driveshaft.
Custom fuel lines / FPR setup.
Custom wiring harness.
Custom air intake.
Custom clutch line, possibly need different clutch master.
Custom radiator, heater, a/c, ps hoses.

Cost ?

$5000-Holyhellyourbankaccthurts.

$5000 is on the side of, I could do it for this amount, having a good deal of knowledge on swaps, having done several swaps, and having a good bit of skill for fabrication, and doing the wiring myself. And would probably require using an auto trans.

You're going to be considerably towards the "ouchmybankaccthurts" figure.

As far as better, depends on what you are after exactly, and how much you like working on the wedged in there VG30 compared to things being much easier to work on with an LSx in there.

17/26 mpg on the LS1 with 320 HP/ 345 FT lbs

16/22 mpg for the VG30DETT 300HP/280FTlbs
