i dont want to sound stupid but if it's for the whole state then wouldn't it make more sense if it were somewhere in the center of the state?

It really makes sense to put it in the center of the state, if you want to make it "Nopi-Sized". Although thats a humungous undertaking in and of itself...
I'd consider Orlando or Tampa ways, you'll get more notherners to that, as well as not making it a Miami car show, since no one ever seems like to drive 4 hours south or more.

If you have it down there, expect only the south florida people. As Laura said it would make much more sense to have a central location, such as Orlando, Tampa, hell even the space coast.

If you want to do this right, rethink it, allow more time and orchestrate with all of the communities better.
