Default reading an a/f gauge

This may seem like a stupid amature question, but honestly, ive never learned how to read an a/f gauge. Because im eciding to o juice i thought it'd be in m best interest to get some gauges so i don't blow my car apart. So i got an autometer phantom A/F gauge and Nitrous Presure gauge as well. My question is how do you understand the damn A/F gauge ? I've heard you're only supposed to be concerned with what it says at wide open throttle (WOT). When im at WOT it reads rich and i've heard you want it to be at Stoich to have the air to fuel mixture perfect and then you're safe to spray. if somebody could help me out here i dunno how to read the gauge. Also when i down shift, it shuts off until im at idle. Is that normal? Wire problem maybe ? Let me know guys...thanks. Sorry this is so long.
