This damn topic has been discussed to death already.
The main damage you are going to do to your engine will occur during a cold start. Since there is no set amount of coolant in the block (constantly flowing now due to no thermostat) it will take the engine longer to get up to its ideal operating temp and therefore cause more wear.

just get one from like discount auto or whatever. there like 6 bucks. and hella easy to install. get one for a gs-r if you have a b-series motor it should fit. they should have one that cools at like 160 or something like that.
