I have done a few and this is my 2 cents. This is not necessarilly a show car thing. What is wrong with wanting a clean bay? The way I see it if you have a wiring issue then it is no quick fix usually. I personally like the look as long as the fuses are accessible whats the problem? I see more blown fuses than wiring issues, especially on Hondas. I think it makes working easier without the clutter honestly.
I just got done doing one on my Suzuki, looks so much better and honestly simpler to work on.
Definetly not cheap to do, not for the weak of pocket.

Just curious but how much do people typically pay for something like that?

i've done a couple of them, and i can tell you from experiance that it is going to look like shit if the engine bay paint is not in good shape.

ie:

completely tucked. BUT that car was done w/ a stock harness so trouble shooting wasn't a problem at all. The car has no heater core so i ran the main harness thru the hole in the fire wall and the rest of the wires thru the fender wells.... I will be done with my crx soon and ill post some pics.

As far as someone around here that i would Pay to do wire tucks.......there isnt anyone. The only person that i know of that is really good ( like OEM good ) at wiring is Neil sutton, but i dont think he does wire tucks.
