Default Dyno explained?

I'm kindof curious how a dyno works, I know the car is on the roller and it is rolled with the tires. But how does that come out to be HP and TQ? Does it work off of rotations? There is another thing, why dyno a car in 3rd gear or 4th gear what is the difference? I could see traction being a reason but im not sure. Any insite would be nice

Force = Mass x Acceleration
Work = Force x Distance
Power = Work / Time

The car accelerates the drum and the weight of the drum (rotational mass) is known so by calculating the above values from the speed of the drum and RPMs gives you horsepower and torque values.
