I found a very nice tech article on 50tech.com on how to adjust/check the TPS. I lack the digi multi-meter but that's not my problem. It says that you have to probe a couple of the wires to get the reading. How would I actually do that without screwing anything up?

You can stick a small pin through the wire and touch your volt meter to that pin to get your readings. I did this but never liked it because corrosion WILL enter the wire at this point and eventually could wreak havoc on your wiring. The better option is to go to the junkyard and make up a harness that plugs between the TPS and the EEC Harness that has points for you to take voltage readings.
BTW, don't waste your time setting the TPS to 0.999987234 volts, it doesn't make a damned bit of difference on the performance. As long as it doesn't idle high, you're OK.

I've read anywhere around .995-.997 was do-able. Does that sound about right? I might try the pin for now and keep the wires covered with elec tape. Would Sewing needles work?

The throttle response will be a bit more crisp, but that is about it. It's just another one of those free tweaks you can do for that little extra edge. While you are in the area, I would take off the Air Idle Bypass valve (the thing that looks like a little film canister on the side of the TB) and blast it out with some carb cleaner. It'll help the car idle better.
