Try a better fan, Taurus is a good chioce, or a Mark VIII is better imo.
run a high flow, 180 thermostat, too many guys get scared and run a 160. Them complain when their shit doesnt run right or is a little weak at the track, efi motors don;t really respond as well to that cool of a coolant temp.
Ideal operating temp is 200* for the ecu, 220* is getting a little scarry, try those couple thing and make sure you "burped" the sytem well when yo did that pump and rad.

i would try cutting the plunger off and see if it helps, it is a 8 dollar part if it does not help its only 5 mins and no more than ten dollars.
and it being carbed should not make any diff.

Black magic fans don't work well at all, you need more air flow, the suggestions above are great for budget cooling, or if you got some cash go with a Spal fan (electric), or install a flex fan(belt driven). I had to run a flex fan on my blown 89 coupe down here, it worked great and the 2-5 horsepower loss didn't matter as long as it ran cool.
