how problematic is it to switch an Fbody to 6speed? I've tried on other cars but the tunnels are completely different leaving little if no space in between the clutch and brake.

Plenty of people have done it, but with these cars people usually don't do it because it's more logical to just buy a 6spd car. Plenty of people have done the swap though, not any harder than any other auto to manual swap.
