GSXR and Katana
The GSX-R is a race bike made street legal.
The Katana is a street bike that is made for the street.
The gsx-r is lighter and feels smaller where as the katana is going to feel heavier and bigger.
If you are comparing the gixxer 600 and the katana 600 the gsxr is faster in all areas but the katana isnt a dog. The katana is a great bike to learn on.

Would you suggest learning on a gixxer 750? Better to just start off bigger and respect the bike then buy a 600 only to buy a 750 later on. What do you think?

By you're way of thinking, just go out and buy a busa and be done with it. That way, you can "respect" the bigest bike out there.

If you want to have a badass bigger bore bike bad enough then you could by all means learn on a 750, but it wont be as much fun.
I would much rather start with a new gixxer 600 (which is a handle full in itself) and not be afraid to push it to its limits and have to do more work (which equals a better rider) to keep up with the larger bike.

My good friend has a 2001 suzuki SV650 and it is a damn nice bike, and fun to ride. Altough I would stiffen up the front forks and the rear a little. But that is a good learning bike.
