lots of 636 guys do that mod to help the bike with bottom end power delivery... -1/+2 .....Cammo's got a +3 on to help with his extrodinary wheelies im assuming...

Im with you on that im getting so confused. I heard if i do +2 in the back I would have to switch to a 520 chain, then I hear I can keep the stock 525 that's on there?? It is already -1 in the front. Or now im thinking maybe he said I "should" go with a 520 chain, but will need to get one with more links?

I was -1 (front) +2 (rear) and I had a stock chain.

When I went -1(front) +3 (rear) i went with a new chain just so everything wears evenly.

In theory, it'd reduce your top speed. Your shortening your gears. Unless you compensate and gain a taller 6th gear, your hindering your top speed.
