now for future reference...if something like this were to happen to me, would i be justified and not in the wrong by shooting at him? i mean its like attempted vehicular homicide, i should be able to protect myself correct?

There is a post out there on one of the forums about riding with a Gun... It's legal and that new law says its ok to kill somebody if its self defence...
You just have to prove it to be in court... but on a bike getting run off the road with a truck... Sounds like self defence to me...
