* Update: Take the Flat Iron Steak out of the refrigerator for only about 30 minutes ahead of time to allow it to come to room temp. If you buy a full length flat iron steak cut it in half. Rub it down with olive oil and season it with a mixture of 1 tsp. pepper / 1 tsp. onion powder 1 tsp. garlic powder / 1/2 tsp. sea salt
Put a thin layer of olive oil in a non-stick frying pan and bring it to high heat and cook the steak for 1 minute on each side. Reduce heat to medium heat and turn the steaks every minute a total of 10 to 12 times to reach medium rare. Longer for medium.
Remove the steaks and put them in a shallow dish and cover loosely with aluminum foil and let rest for 10 to 15 minuets. Slice 1/4 inch thick. (VERY IMPORTANT) make sure you cut the steaks across the grain (NO LENGTH WISE) Serve with salad and baked potato! Enjoy!
