This answer comes directly from Crispeed (the tuner for this car).

"That was to keep it from blowing the tire on the dyno, we cant put the power in early, at redliine the car is normally around 200-205 mph"

In actuality the car still spun on the dyno at 1500hp and there was still a second stage of nitrous that wasn't used in the vid.

So this is why the car reacted how it did.
