230 is the high end of normal operating temperature. My bike's fan kicks on around 220-225, but I have seen the temperature as high as 232 when riding hard in the heat of the Florida summer and never had a problem with the engine cutting out. I did have a cooling system leak once that caused it to overheat around 245-250, meaning the temperature warning light started flashing and I had to turn off the engine to prevent damage.
While it is definitely a good idea to figure out why your bike is getting up to 230 on a regular basis (cooling system problem), I'd say it still shouldn't be shutting off on you even at that temperature (perhaps a completely separate problem?).
