If you've got big bucks and plenty of time, one of the best places around is Cars & Concepts in Tampa. But, it won't be cheap, and they're usually pretty backlogged.

+1 for Cars and Concepts. Thomas is an awesome guy. My first time to the shop with my E36 M3 he treated me like he knew me forever, gave me a tour of the shop. They are stand up guys.
