I'll just throw my 2 cents in here. Those cars were decent family cars in the day and I know that they can be made fast however...that really means nothing in a "show" car. That being said, if you you really look at "show"details, the interior being redone is nice, but the reason average car makers have lots of smaller sections in their seats like the multiple rolls in the center sections of these is because it is WAY cheaper than 1 large skin that covers the entire area. If you really want to redo an interior you take out as many seams as possible and cover largest areas possible with 1 piece and no "break up" seams. In addition, the redone steering wheel is not exactly a high end job...it looks sloppy still.
Personally I can not stand the painted dash either, but that is a personal preference and many judges like it....
Are the door handles grey?? or is that the camera angle? It's the little details like making the door handles match as well, etc, that really set off the interior.
Congratulations on the trophy and as long as you like it, thats what matters.
