Ok...first, removing a cat from a street driven car is illegal, so no shop will do it.
Second, it it wont give you enough power to go through the cost and effort to remove it.
Third...if you have a lower oxygen sensor you will need to find a way to reprogram or trick the ECU to think the cat is still there, or you check engine light will come on, and ECU may go into a safe mode.

The removing cats to make power deal came from the early days of emission controls, back in the early 1970s. Early cats were a different design from modern ones, and restricted flow greatly. Modern cats flow pretty well, and most cars see little gain from removing them. Unless your running lots of boost or spray you dont need to worry about removing it.
