They will check shit like that, pull out any afc's, gauges (add on), intake, stuff that doesn't affect the car running. They want to see a car that was able to actually be driven at time of the crash...legally driven might I add so no go on taking out the lights and shit lol
I wouldn't honestly touch it, let the insurance see EVERYTHING so it jacks up what the car is worth. Then ask to buy back the car for cheap. They usually sell em back really really cheap and all you have to do it get it to your house where you can part it out and keep what you want off it. Then just scrap it for metal afterwards.
