Start hitting car websites and inviting them to come out. Post a 50/50 drawing. Get some sponsored merchandise to give away and be sure to mention the sponsors name/location. Go to other meets and pass out flyers. Read the other postings from local events to see what other people did already, and what you should do.
Evenings are cooler than a 6-hour heat-of-the-day meet.
Get a pkg of dogs and a pkg of burgers to start. No big investment.....
If people show, run to the store. If low turnout, eat 'em yourself........
Having the kids do Karate demos might be some entertainment.

You won't buy the bus on the first meet. It will take some work.
But aren't you in business anyway?
You have some great ideas. Allow me to address them.
A few posts back, I stated that it would be about a month out.
Also a few posts back, I said it would be in the evening around 7:00pm until we all left...Maybe as late as 10:00.

I've never approached anyone to sponsor an even of mine. I wouldn't know where to begin. This is my first "fundraiser" so to speak.
I know about the dogs and stuff. I've held events before, where few people showed up, so I learned that much. LOL
I can certainly have the kids do some demo's. AND some of the adults.
I know we won't be able to afford the vehicle on the first fundraiser, but it'll help. Never said it was going to be a bus.
