Basically get as much as info as you can from each and then choose one based on your impressions the shop. Then, have them do very small mods and see how you like them. If you are comfortable with them then stick with them.
Good advice and definitley stick with one shop for the long run unless they screw you over. Hopping around from shop to shop just creates problems.
