The rabbit is to symbolize vitality and that we are to populate the earth. The egg is a symbol of life.

Now, neither Jesus NOR God said that we are to celebrate with those two symbols. Therld didn't know how to do it with out offending anyone, so they made those two things up. Maybe there's more to it than I am writing here, but thats the basic gyst of it.
