if you're going to spend all that money on valves and springs, at least get the crower v3 cams. and the valves arent necessary unless you're looking to make alot of power or the stockers are chipped/junked.
i've been toying of doing this on a project car im looking to start, very similar setup.
i think the goals you want to have is get high compression, just not too much so its streetable still, i'd for for custom CP or arias pistons and the AMS sportsman rods (they are the lightest), and balance the whole rotating assembly including the crank pulley, flywheel, and pressure plate. this way you can have a balanced bottom end and spin it up to about 7500rpm, to take advantage of the cams. definitely go for ITB's or at least a short runner manifold (like Xsessive Motorsports or custom). the power band is going to shift higher, but thats part of making n/a power.
you're on track, just make sure you get a really good tune.
