I'd try and get the car scanned if possible. Might help lead you in the right direction to the problem.

I was told that hard starting issues, could be due to a bad coolant temp sensor. Not sure if they is true, or not. The fact that your car is jumping up to the 3,000 rpm range while cranking, doesn't seem normal though. Could possibly be fuel related I suppose, or maybe the ECU sustained damage...
