best idea is to go from the ground up:

oil pan gasket
front and rear main seals
water pump gasket (but you really should just buy a new pump if ur gonna replace the gasket)
head gasket
intake and exhaust manifolds
cam o-ring
distributor o-ring
valve cover gasket (w/ plug rings, like u said)
throttle body

the front and rear mains are the toughest to do when the motor is in, so if u can, do them first and foremost and then everything else (while its a pain) can be done in the car.
