You can also go to court, and take all the evidence with you that will prove it to be stock. A piddling little equipment violation such as a dim tag light will print out on your Driving record as "operating a vehicle in an unsafe condition or illegal manner............."; or words to that effect.

But in the mean-time, you might want to talk to the Sherrif's office and ask if there's some kind of document you can carry in your car that certifies your exhaust's stockness. I'd just ask what they'd accept, on account of your getting a ticket for factory running gear. They should have something to say to that.
