I have an '05 and experience this too...somewhat. If you leave the car on (ie: radio going) while filling up the tank, when you get back in the gauge will not correctly register. This is due to the way the fuel level is calculated (does not take into account drastic swings, only small incremental changes). To remedy this, simply turn off the car when filling up or turn of the car when you get back in it.
That aside, the other issue I have with the '05 STi is that it never seems to register completely full on the gauge. I have to "top off" the tank to even get the tank on full. Odd.

While I'm bitching about the STi the other thing that irritates me is the damn indicator. Unless I take a very tight turn the damn left/right indicator stays engaged and I drive off blinking like an idiot.
