Craig and I have already talked about an SR powered Fox coupe. I'm not building one soon, but I'll help if anyone wants.

We checked, and without mods, the entire SR would sit behind the front crossmember and about even with the centerline of the front wheel in a Fox. Get a tubular K-Member and A arms, (you can get them without the coil spring cups and use coilovers, and also without the motor mount pads which frees up a ton of room) and do custom mounts from the frame rails which is easy on a Fox. Do a road race style rear suspension or Cobra IRS, and it would be a BAAAAAAD ride. You could get one down to probably 2600 lbs easily enough with the lightweight SR.
