It's nitrogens ability to carry the additional oxygen, which is released when it is ignited in the combustion chamber. Blow hard into the fire on the grille the nest time you are grilling, and you will get the picture.
Add in the EXTREMELY cold temp of N20 in it's gaseous state, into the intake, and you have a wonderfully colder intake temp.
