For rolling shots you want the shutter to be the reciprocal of the cars speed
So say the car is going 60mph
Your shutter should be 1/60
Put the camera in Tv mode (shutter priority) and it will do the rest
ISO depends on how much light there is
Both cars (camera car and car being shot) should be going the same speed

I wouldn't use 1/60 all the time, the outside light will play a part too, if it's really bright out (like it normally is in florida) you might have to go lower. The faster the shutter, the less light will come in the camera, the slower the shutter the more light. So if it's around 12:00 ish and no clouds in the sky, you might have to go higher than that (even if you are both going 60).
Just some things to try to help out, you can tell normally in your pics what's a good shutter speed to use after a few previews at different speeds...
Here's one I took day 2 with my camera, not what I wanted, but it's hard to drive and take pics at the same time (I get stupid sometimes, I know)

This has a shutter speed of 1/30, so it'll all depend on a few variables like I stated above... Good Luck...
