From what you explained it sounds like your car thinks your driving on a flat tire and wont turn off stability.... Fix the sensor.... And just incase this is how to disable it on a good working car...
One press of the T/C button = traction control OFF. (will allow wheelspin without interruption)
Two presses of the T/C button = Competitive Driving mode. (same as T/C off + Stability control is turned down)
Hold T/C for 5 seconds = traction control OFF + Stability OFF

To disable stability control you do the following
press the traction control button once and the screen will say traction control off. Press it again and it says competitive driving mode, press and hold for 10-15 seconds and it will say traction and stability control off.
For the tire pressure sensor you need to calibrate it to the car. If I recal correctly this can be done by doing the following
put the key in the ignition in the on position
You then need to calibrate each sensor by letting out lots of air until the horn honks
after the horn honk go to the next wheel and do the same
do this for all four wheels to recalibrate the sensors.
If any of this doesn't work try checking the cadillacforums.com for more info. That is where I figured out how to do these things when I had a CTS-V
