I gotta buy a new one, gonna get a metal one.
3 layer or 7 layer?

Thicker? More layers means a tighter seal as well. More flexibility to fill in gaps and all.

I've never had an issue with the OEM carbon/paper gasket. My brother runs one at 360whp, I have one at 420+, and Enthalpy had one at 540whp. How much more sealing do you need? The only down side is that they're usually not reuseable. The upside is that they're like $12 at Nissan, who usually have them in stock (B13 SE-R).

I've used the copper ones, and had to retorque them several times. Take one look at your manifold bolts and ask yourself if you want to do that.
