I have a car setup between 300-350 hp. Running on T3/4 turbo.
So, would you think that there would be much performance difference between a 2.75" and 3" cat-back?

probably not, but 3" will be cheaper and more common in most cases. not to mention flanges and v-band clamps will be ready available with 3". you will see more power out of a 3", it may just be 10~20hp at a given boost level.
